Passion Mango Cheesecake with coconut meringue

Meringue
150 g egg white
140 g caster sugar
140 g icing sugar
 
Whisk the egg white on a low speed to create an even structure. Add the caster sugar gradually until the mixture forms stiff peaks.
 
Using a spatula incorporate the icing sugar.
 
Spoon the mixture into a piping bag and deposit small drops onto a lined baking tray. Sprinkle generously with coconut.
 
Cook for 50 minutes at 110˚ C.
 
Dice juicy mango and mix with some fresh passion fruit.  Pour generously over the cheesecake and place the meringue over it. 
 
Serve and güzzle chilled.

Frü-ty sundae

Ingredients:
Ür fav Vanilla ice cream
Crunchy meringue
One or twü Frü lemon cakes
Toasted flaked hazelnuts
Local fresh raspberries
A dollop of whipped cream (Chantilly)

In ür poshest glass bowl, dish out a few bountifül scüüps of Vanilla ice cream. Break a few pieces of our Frü Lemon cake into the bowl. Add a few dollops of Chantilly on top. Crush the raspberries using a fork with a little sugar and pour over. Crush the meringue using ür hands and sprinkle over with a few hazlenuts to make a Frü-tastic pud that will wü any guest!
