Passion Mango Cheesecake with coconut meringue
Meringue150 g egg white
140 g caster sugar
140 g icing sugar
Whisk the egg white on a low speed to create an even structure. Add the caster sugar gradually until the mixture forms stiff peaks.
Using a spatula incorporate the icing sugar.
Spoon the mixture into a piping bag and deposit small drops onto a lined baking tray. Sprinkle generously with coconut.
Cook for 50 minutes at 110˚ C.
Dice juicy mango and mix with some fresh passion fruit. Pour generously over the cheesecake and place the meringue over it.
Serve and güzzle chilled.
