Like so many marvellous things, this pud started with a question. Can something be comforting and exciting at the same time? To find out, we took the butteriest, munchiest biscuit base, added an intensely fresh layer of mango and passion fruit curd, then topped it all with a soothingly smooth passion fruit cheesecake. And? Bingo! The culinary equivalent to a hug on a rollercoaster. Yeeeee... Ah, bless.
